Sag has a cause
A ceiling that bows between joists is usually 1/2" board on 24" o.c. framing, an insulation load above, or fasteners that missed. We open a small inspection cut, find the reason, and replace with 5/8" board or add framing rather than screwing the sag back flat.
Plaster to board transitions
Older Edison houses have plaster over wood lath. Where a section has failed we cut to the nearest joist, shim the new board to plaster thickness, and tape the transition so the plane reads continuous instead of stepped.
